Yummy Breakfast Toast (Three Ways)

Arguably one of my favorite parts about the weekends is the s l o w mornings. I mean waking up at your own leisurely pace, taking the time to thoroughly cleanse your face, and making your own breakfast. Maybe the morning light is pouring in or maybe it’s the afternoon sun, but either way - you get to breathe for a second and relax. I’ll admit that I am not the best about eating a decent breakfast during the week as I am usually grabbing a banana and oatmeal in a cup as I speed walk to class. On the weekends, I used to make huge omelettes, but have recently been loving to make fried eggos with a side of bacon or fruit. I’ve decided to share three ~sophisticated~ ways that I love to enjoy a warm slice of toast that you can easily share with two or three pals (or just yourself) . Not only is there an emphasis on multiple dimensions of flavor here, but I love to incorporate color into these healthy eats for a beautiful dish. Enjoy!

Fried Egg Topped w/ Sriracha, Garlic, and Scallions

For me, this is the classic way that I make my eggs. I can also confirm that this is the fastest egg dish that you can make as I have whipped this up with only a minute to spare before my commute.

  1. Heat a tablespoon of olive oil on a skillet to medium-high heat

  2. Add your egg and season with garlic power + pepper

  3. Top with chopped scallions or garlic greens

  4. Throw in a dash of water and lid the pan to ensure an even cook

  5. Fry for about 1 minute

  6. Slide on to your toast + add sriracha

Arugula + Smoked Salmon

I wanted to add a twist to the classic smoked salmon + capers bagel and top this fish with a different kind of green. Arugula is perfect for its peppery flavor and all it needed was a little bit of acidity and heat to balance it out!

  1. Take two slices of Atlantic smoked salmon and top your toast

  2. Top with a handful of arugula

  3. Squeeze a lemon + dash with crushed pepper flakes

The Classic Avocado Toast (thaaaanks!)

I hated avocado for so so long for its buttery texture but little did I know, I was doing avocados wrong the whole time. Loaded with so much potassium, monosaturated fatty acids, and fiber, it is no surprise that avocado has recently emerged as such an essential health food and if [avo toast] ain’t broke, don’t fix it - right? I like to slice half an avocado and save the other half for another slice or for later, and sometimes I’ll run a fork over the slices if there isn’t enough to go across the bread. The paprika is perfect for boosting your metabolism and the lemon juice adds a little brightness.

  1. Cut an avocado lengthwise and add slices to the toast

  2. Top with paprika (or red pepper flakes!) and lemon juice

What to do with the rest of my lemon?…

Chances are, you just cut a lemon wedge to top one of these toasts and you have a good portion left. One of the ways that I make sure I stay hydrated throughout the day is with my hydroflask filled with the juice of a whole lemon. Besides that, it is so important to drink a full glass of water on an empty stomach upon waking up to flush your body of toxins and get your system going. It’s also an excellent source of vitamin C to support collagen and provides electrolytes for the body. As for the concern of acidity @ your enamel, sip through a (reuse-able) straw and rinse your mouth with water afterwards to prevent erosion.

Just to diversify the plate in color + nutrition, I love accompanying my breakfast with little bits of different kinds of fruits. For this, I sliced a ripe passionfruit and some golden gooseberries which are both a bit tart, but so delicious and juicy. Little touches like these are what will top off a well rounded breakfast for a productive day!
